Our story
It started in 2012 when I was sitting under a beautiful tree with two of my best friends during a holiday at the Château Lacrou holiday home in Vresse-sur-Semois, enjoying a cold beer.
“Shouldn’t we try to brew our own beer?”
I was eager to write my own beer story. I took the ‘hobby brewing’ course at Syntra West together with a friend. Of course, we tried out the training in practice and started experimenting. It was more a matter of trial and error, but the fun was more important.
That experiment kept resonating with me. In 2018 I followed a 2-year course ‘Micro-brewer’ at Syntra West and learned everything about raw materials, fermentation methods, brewing technology and the brewing process. I also got the necessary tips & tricks from our teacher Thomas Vandelanotte (Brouwerij Bourgogne des Flandres) to create my own beer style, write beer recipes and start my own brewery.
It didn’t take long before the name for the brewery was there, because it is located in our ‘BIJHUIS’
In our West Flemish dialect it also has a very nice connotation: ‘t byhuys’ reminds us of ‘van bie uus’ i.e. from us, a Zilleghems beer.
The name is there, the space is there and the installation is there too. A Coenco installation of 2.5HL + 2 fermentation tanks, 1 of 250L and 1 of 500L. All set to write my story !
