Jacobins Foeder n° 17 is an uncut lambic (beer of spontaneous fermentation) that has matured for no less than 6 years in a single oak foeder, numbered 'XVII'. Only 8,000 bottles were filled.
This 100% foeder beer underwent a sublime taste evolution, thanks to the maturing process that played an active role over the years.
After filling in the bottle, a second fermentation followed. The beer has a sour taste with notes of wood and red fruit, followed by a slightly dry aftertaste.
The combination of spontaneous fermentation and refermentation in the bottle results in a beer with a unique taste complexity that is at the same time extremely balanced.
